Like all the books in the CIA series, this one is an outstanding combination of illustrated step-by-step cooking techniques, beautiful full color photography and a diverse collection of mouthwatering recipes covering the gamut of ethnic and culinary styles.
In this book the CIA takes on the topic of one dish meals -- a boon to busy cooks as the usually means quicker clean up times. The result of their endeavors is an array of dishes from light to hearty, traditional to nouvelle, classic American comfort foods to favorite ethnic favorites from around the globe.
While the Culinary Institute of American is known for training world class chefs, all of these recipes are adapted so the average home cook will have no trouble achieving impressive results with them.
