Review:

After more than 1000 shows on the TV Food Network, six books, six restaurants and a new TV sitcom, America can't seem to get enough of Emeril Lagasse. Luckily, this new tome will help feed the Emeril need with more than 150 new recipes gathered from Laggase's Prime Time cooking show.

If you like Emeril, you'll love the recipes in this book. Like Emeril himself, this collection is spirited and eclectic, spanning his Fall River Massachusetts roots to his adopted home of New Orleans to the glitter and glamour of Las Vegas (and a whole lot more).

One of the things I like best about Emeril is the way he encourages cooks to experiment and find their own culinary voice. That free spirited attitude shines through in this collection, as each recipe comes with Emeril's notes and suggestions, not to mention encouragement to draw outside the lines and make each recipe your own.

A glance at the chapters reveal the true essence of Emeril: from "Fall River Memories," which recall the taste memories of Lagasse's Portuguese-French Canadian heritage: to "Y'All Southern," a fabulous grouping of recipes from Louisiana, Mississippi, Arkansas and Alabama; to chapters on "Macho Meats and, you guessed it, Pork Fat (well, not necessarily pork Fat, but a delicious selection of recipes using Emeril's favorite ingredient). I especially enjoyed the chapter entitled "Emerilisms" which are Lagasse's creative takes on traditional classics. Other chapters include Soups, Gumbos and Chowders, Salads, Pasta and Rice, the Floppin' Fish Market, From the Barnyard, Vegetables, Breads, and desserts.

So if like most of America, you just can't get enough of Emeril, or if you're just ready to kick your cooking up notch, you'll want to indulge in this latest collection of culinary treasures.
