A Weekend of Culinary Magic -- The
Fairmont Kea Lani Food and Wine Masters…

MAUI,
HAWAII, USA -- The Fairmont Kea Lani Food and Wine Masters two-day event
lived up to its promise. Wine tasting under the spell of a Maui sunset
- dinner composed of five signature dishes, each with the magical touches
of Hawaiian Regional Cuisine - all served under a Kea Lani ("heavenly
white") Canopy.
On
one evening George Mavrothalassitis led with Sautéed Foie Gras
With Warm Spinach Salad followed by Mark Ellman's Fried Ahi Taro Salad
with Coconut Chili Cream. Amy Ferguson-Ota then stepped up with Island
Wood Smoked Quail, Sweet Corn Chorizo Stuffing, Beauregard Yam with Ohelo
Berry Sauce, followed by Beverly Gannon's Short Ribs with Island Goat
Cheese Polenta. Mark Okumura's Black and White Chocolate Decadence with
Fresh Mint Ice Cream capped the meal.
At lunchtime, the three-course meals were not quite so ambitious, but
we had the bonus of watching the chefs' sorcery in action. We learned
something about the ingredients, something about the chefs' techniques,
and as much as possible about the fresh tastes - the magic - of Hawaiian
Regional Cuisine.
Here
are just a few of the lunch recipes the chefs demonstrated. Most ingredients
will be easy to find but for the few less common ones, there are substitutions
you can use. The two recipes from Chef Tylun Pang, Executive Chef at the
Fairmont Kea Lani, who supervised the entire event, were not part of the
lunches but have their own kind of Hawaiian magic.
Dates for the next Fairmont Kea Lani Food & Wine Masters
are October 11 & 12, 2002. This time, Alan Wong will be the featured
chef. His restaurant in Honolulu is a destination unto itself and a little
bird told me he will soon be opening a spot in West Maui (think Ritz,
think Carlton). Other chef(s) to be determined, however, you know they
