Also known as catsup and catchup.

Sweet tomato ketchup is the sole survivor of a broad category of thin salty sauces with a long shelf life. Ketchups of yore included those made from mushrooms, oysters, mussels, and walnuts.

If You Don't Have It

Substitute 1 cup (250 mL) ketchup with:

  • 1 cup (250 mL) tomato sauce + 1/4 cup (50 mL) granulated sugar + 3 tablespoons (45 mL) apple cider vinegar + 1/2 teaspoon (2 mL) salt + pinch of ground cloves

  • 1 cup (250 mL) chili sauce (adds chopped pickles)

  • 1 cup (250 mL) barbecue sauce (darker; more complex flavor)
