Bambi's Low Fat Turkey Salad

Cheri's sister Bambi came up with this recipe as a way of using leftover turkey. Those on a low fat diet will appreciate it falling within the diet's guidelines. Everyone will appreciate its delicious taste!

Ingredients: 1 cup leftover turkey, chopped
1 cup low or no fat cottage cheese
2 hard boiled eggs, chopped
1/3 cup light mayonnaise
1 teaspoon lemon pepper blend
1/4 teaspoon salt
1/4 cup celery, diced
1/2 cup low fat sharp cheese , shredded
Instructions: Chop first six ingredients together finely (or use a food processor). Mix in 1/4 cup finely diced celery and 1/2 cup of shredded sharp cheddar cheese. Use as sandwich spread, or stuff Belgian endive leaves.
