Author Notes: One of my earliest food memories is of the Popovers served at the Log Cabin Restaurant near where I grew up in Northampton, Massachusetts. At age five, I thought they were the most amazing thing. I still do.

You whip together a simple batter, throw it in the oven and pretty soon you've got delicious puffy hot rolls to have with dinner or spread with fruit preserves for breakfast. Since they're practically hollow, you can fill them with savory ingredients (beef stew comes to mind) for a simple but elegant dinner.

An extra added bonus is popovers never fail to impress. Don't tell your dinner guests they're so simple to make. It will be our secret, unless you want to take pity on them and email the recipe by using the link at the top of this page.

Ingredients: 1 cup flour
1/4 teaspoons salt
2 eggs
1 cup milk
1 tablespoon melted butter
Instructions:

Preheat oven to 450 degrees F. Grease a popover pan or large sized muffin pan.

Beat eggs, milk and melted butter together. Beat in flour and salt. Fill Greased muffin or popover pans to 1/2 full and bake for twenty minutes. Serve immediately.
