| Author Notes: | Here's a great way to use leftover cooked chicken or even leftover Thanksgiving turkey. |
| Ingredients: |
12 ounces cooked, shredded chicken or turkey 10 cups torn romaine lettuce 1 cup fresh bean sprouts 4 green onions, thinly sliced 1 cup crispy chow mein noodles 1 small can mandarin oranges, drained 4 tablespoons toasted slivered almonds Dressing: 3 tablespoons rice vinegar 3 teaspoons salad oil 2 teaspoons sesame oil 1/4 teaspoon salt 1/2 teaspoon pepper 1 teaspoon sugar |
| Instructions: | Prepare dressing by combining vinegar, oils, salt, pepper and sugar until well combined. Toss the salad ingredients in a large bowl and toss with the dressing just before serving. |
