Author Notes: Experts now estimate over 20 million Americans have diabetes and many medical experts suggest one of the best activities for many is to exercise in the great outdoors. Here's a camping and RVing tote-along sandwich suggestion provided by Marilyn Helton, editor of Cinnamon Hearts, the magazine of living a winning diabetic lifestyle. Diabetics should always check with a medical professional regarding their food plan.
Ingredients: 1 loaf whole wheat French bread, unsliced
1 can water-packed tuna, drained and rinsed in a colander
1 cup nonfat cottage cheese
1/4 cup light or fat-free mayonnaise
1 cup alfalfa sprouts
lettuce
Instructions: Mix tuna with cottage cheese and mayonnaise. Slice bread horizontally; spread with lettuce and sprouts and slice into four sandwiches. Wrap tightly with plastic wrap or put into plastic bags. Tote in cooler.
