An eclectic collection of recipes which highlight the lively and diverse flavors of the Rocky Mountain region, this book will be a welcome addition to any cook's library. The recipes are innovative and mouth-watering. Even though it is a regional cuisine book, you can easily find the ingredients for most of the recipes and DeDominic gives resources for getting those that are not so readily available. There are recipes to appeal to cooks of all skill levels, and people of all culinary tastes, including a respectable portion of vegetarian food. There are many simple, rustic foods as well as gourmet cuisine. Hunters and fishermen (or their significant others) will appreciate the wide variety of creative recipes for fish and wild game. Busy cooks will also appreciate the appendix listing of recipes that can be prepared in one hour or less (there are 43 recipes listed in this section alone). One of the primary measure, for me, of a cookbook's quality is how many of its recipes I actually want to cook. This book contains more than I will realistically get around to making (but I can dream can't I?). Here's a listing of a few recipes to whet your appetite:
