This book contains a HUGE collection of light and healthy recipes from the Mediterranean, which includes not only Italy and Provence, but Turkey, Greece, Tunisia and Egypt. The recipes are so delicious, no will will even realize they are eating "light" cuisine, but rest assured, the recipes are healthy (the book even has a forward by Dr. Dean Ornish). "Mediterranean Light" has been in my cookbook collection for several years and I use it constantly. There are hundreds of recipes here, complete with a breakdown of calories, fat, sodium, protein and carbohydrates. Shulman also includes complete menu ideas for easy entertaining. The research in preparing this book must have taken Shulman years! There's just so much here. Even beginner cooks should have no trouble accomplishing the recipes. Instructions are clear and simple and include Shulman's interesting notes on how (and where) she developed the recipes. Whether you need to be on a light diet or not, this book will surely be a favorite. While there are plenty of recipes to keep the carnivores happy, vegetarians will also find a huge amount of interesting fare as well. |
