This book is a must-have for pizza aficionados. James Beard award winning author Peter Reinhart took his quest to find the perfect pizza seriously -- so seriously in fact, that this book should have been called Global Pizza. The author traveled all the way to Italy in his search, as well as criss crossing the United States hitting all the traditional pizza hotspots: Chicago, New Haven, Providence, Philadelphia, etc. as well as great new pizza spots like Dallas, Phoenix, San Francisco and Los Angeles.
Reinhart's essays are entertaining and informative, making this one of those cookbooks that are really fun to read. But beyond casual reading, this is also a working cookbook that includes Reinhart's pizza making master class covering all the important pizza making techniques as well as over 40 pizza recipes from all over the United States and Italy. The recipes cover the pizza gamut, from traditional to nouvelle. An extensive chapter on doughs will also give you lots of choices when it comes to building your perfect pizza.
Regardless of your favorite kind of pizza -- Neapolitan, Roman, Sardinian, New York style, Chicago Style and everything in between including foccaccia and pitas, with this book as your guide, you'll be able to make your own perfect pizza at home anytime you want it.
