Review: There's a lot for American home cooks to like about Loretta Scott Miller's A Yucatan Kitchen. She opens up a new world of flavors in a way that is simple and approachable for western cooks, while maintaining the essence of her subject's authenticity - a hybrid of Mayan, Mediterranean, and Caribbean flavors.

A former food writer and editor who relocated to the Yucatan in 1997, Loretta Scott Miller includes notes on the history and traditional uses of each dish. Most ingredients are easily found at the average supermarket, but the author always includes easy to find substitutions for those few that may prove more elusive. Nothing fussy here - preparation of most dishes is simple and straightforward.

Chapters include: Foreword; Yucatan Pantry; Recados and Salsas; Beans, Rice and Pasta; Poultry; Pork and Beef; Seafood; Tamales and More; Vegetables; Soups, Salads, and Eggs; Beverages and Desserts; Resources.
